The debate between ghee and refined oil has been going on for decades. With so much conflicting information out there, it can be hard to know what's truly good for you. Let's break it down simply and honestly.
What is Ghee?
Ghee is clarified butter made by simmering butter to remove water and milk solids. Traditional Deshi Ghee, like ours at Agumbe Organics, is made from the milk of indigenous (desi) cows using the ancient bilona method — slow-churned, hand-crafted, and full of goodness.
What is Refined Oil?
Refined oil is vegetable or seed oil that has been processed using high heat and chemicals to remove impurities, colour, and odour. While it may look clean, this process also strips away most of the natural nutrients.
Key Differences
- Nutrients: Ghee is rich in fat-soluble vitamins (A, D, E, K) and butyric acid. Refined oils lose most nutrients during processing.
- Smoke point: Ghee has a high smoke point (~250°C), making it ideal for Indian cooking. Refined oils vary widely.
- Digestibility: Ghee is easier to digest and supports gut health. Refined oils can be harder on the digestive system.
- Taste: Ghee adds a rich, nutty flavour to food. Refined oils are largely tasteless.
- Chemicals: Ghee is natural. Refined oils often involve chemical solvents in extraction.
Our Recommendation
For everyday Indian cooking — dal, sabzi, rotis, and rice — Deshi Ghee is the traditional, healthier choice. Pair it with our wood cold pressed oils for a balanced, wholesome kitchen.
At Agumbe Organics, we make it easy to eat clean, cook traditional, and live well.
